Following up on Ohio's Food Safety

Some follow-up on the "food safety" rules in Ohio in response to Jack-of-all-thumbs request for a link.

The only thing I can find is the lettuce was "adulterated" by being "processed" with water in an unlicensed facility. It's pretty hard to follow, but I'll keep looking.

P.S.

Found a bit more. It seems that on farm "processing" falls under the "cottage food operation" heading and, since most homes lack facilities for properly washing food, products that could be hazardous, like adulterated (cut and washed) lettuce, are prohibited.
