Syurp-ing!

Here's a bit about our adventures in mapel syruping. We really appreciat the work that goes into each drop of the real stuff. It is worth every penny!





We went out to help 0ur friends the Adelsbergers with their Maple Syrup today. It was FUN. Kids, snow, frozen mapel sap, buckets to haul, 4X4 ing in the mud, through washes and corn fields, FUN! We harvested more than 100 gallons of sap. LOTS of buckets. The kids were tired by the end. The fire was hot (Josh built a cool (HOT) evaporator (he says its the 1.1 model, 2.0 is in the works. Somehow I didn't get pictures of it. Maybe HE will post.) Lunch was pancakes and fresh maple syrup. Brilliant! (Mrs. Adelsberger is sending me the recipe, but it is based on Sue Gregg's whole foods cooking) I'm hoping to have more to publish soon.
The kids loved the pancakes and the syrup. They haven't liked the whole wheat pancakes I've made in the past, so that is a plus.

We're having a GREAT time sugaring here at Chiot's Run. We're a little smaller scale I think, with glass jars. Last year we boiled over a fire, this year we're waiting for our fire pit to thaw out, it was covered in a few feet of snow at the beginning of the season. I'll make at least one batch of kettle syrup, the smokiness is perfect for bacon & ham.

We haven't eaten any of our finished syrup yet, must make pancakes soon.

One of my favourite childhood memories is of tapping maple trees. My friend's father used to tap random trees along a wooded, secondary road, gathering only enough sap for their own use. She and I took dance lessons together, and when it was her father's turn to drive us to town, we would always stop and check his tin buckets. I was always surprised at the sweetness of the sap, expecting it, I suppose, to taste more like balsam. :-) Sounds like a fun day out!

Fantastic, it's very difficult to get maple syrup here...Cretan honey is the way to go....it's delicious...I've tried to persuade my husband to get bees but, at the moment, we don't have the time...apparently, during the summer months when it's very hot and dry here you need to feed the bees a sweet syrup twice a day...

so this is how it's done heh...we eat this stuff on pancakes often and really do not think much of how it got to us (Sydney)...very impressive...
